I’m an Instant Pot kinda bitch. I like to throw everything in the pot, set the timer, and walk away while the equipment does the heavy lifting.

But occasionally, when I’m feeling frisky… a little Martha-adjacent, I’m in the mood for a good sheet pan meal.

These meals are delicious, easy AF, and they keep meal prep from getting boring for your family. You can literally take this template, swap the spices and veggies, and turn it into a completely different cuisine.

And if you’re someone who hasn’t quite fallen in love with cooking yet, this is a perfect entry-level recipe.

Put on your favourite podcast, tune out the kids fighting, yelling, or asking you for their 487th snack, and slip into the peaceful world of cathartic vegetable chopping, spice sprinkling, and a little culinary magic-making.

(Everything can be found at Costco Wholesale)

  • 2 lb Kirkland frozen chicken filets, thawed
  • 5 zucchini, sliced into ΒΌ-inch rounds
  • Β½ bag of asparagus, chopped into thirds
  • 1–2 yellow or red onions, chopped
  • ~2 tbsp olive oil
  • Β½ cup tamari or low-sodium soy sauce
  • Β½ cup honey

Dried Spices (to taste):

  • Oregano
  • Dill
  • Basil
  • Garlic powder
  • Onion powder
  • Smoked paprika

  1. Preheat oven to 425Β°F (220Β°C).
  2. In a large bowl, add chicken, zucchini, asparagus, onions, olive oil, tamari, and dried spices. Toss until everything is well coated.
  3. Line a large baking sheet with foil and lightly grease it with avocado oil spray or olive oil.
  4. Spread the chicken and vegetable mixture evenly across the pan.
  5. Drizzle honey evenly over the top.
  6. Bake for 25–30 minutes, or until chicken is cooked through and vegetables are tender.

Tips & Serving Ideas

  • Serve with pita bread (also at Costco), tzatziki, hummus, olives, fresh cucumber, and tomatoes – let your kids assemble whatever kind of pita they like.
  • Make a batch of rice to use for leftovers or as a side to your meal.
  • Add crumbled feta, fresh lemon juice, or olives after baking for extra Greek flavour
