Tuna is such a nostalgic food.
It takes me straight back to my childhood when we were “poor”, clipping coupons and eating hot dishes (the Minnesota version of a casserole) because it was cheap, easy and resourceful to throw everything into one dish and bake it.
Kids these days have no idea what it was like growing up in the 90s with frugal fuckin parents. Off-brand clothing was a social death sentence. Everyone knew you were poor if you wore Champion logo socks because you needed a calf-height sock with a logo to accent your Catholic school jumper, but you couldn’t afford the coveted Tommy Hilfiger socks that cost a small fortune (this was before he was cancelled for racism… allegedly).
A pair of Doc Marten shoes practically cost me my soul back in the day. Now, you can get a dupe for anything on Amazon, and no one is any the wiser that you’re a counterfeit hoe.
Anyway.
Tuna casserole was one of my absolute favourite meals growing up. Made with Campbell’s Cream of Mushroom Soup…the level of sodium and MSG in that dish turned you into the god damn Michelin Man overnight. It was delicious.
So when the mood strikes and the evenings are chaotic, I like to fuck with a tuna melt instead.
Here’s my macro-friendly version:
The 90s Kid Nostalgia Tuna Melt
Ingredients
- 1 can tuna, drained
- 35 g tzatziki
- 50 g frozen peas (thawed — 30 seconds in the microwave)
- Minced red onion
- Salt and pepper
- Optional: add whatever other veggies you like or have on hand (minced celery, carrots are great for some crunch)
- Whole wheat or sourdough English muffins
- Havarti or cheddar cheese slices
Directions
- Set the oven to broil
- Mix tuna, tzatziki, onion, veggies, salt, and pepper in a bowl
- Toast English muffins in the toaster
- Top with tuna mixture
- Place cheese slices on top of tuna
- Broil in oven for 3–5 minutes, until cheese melts
Serving Tips
- Serve with sliced veggies and hummus
- Top with some Dijon mustard and pickles if desired
